2g fresh yeast (or 1g if using dried)

160g water

polenta, for dusting

olive oil, for the top

120g shredded suet

180g currants or raisins

a little grated nutmeg

finely grated zest 1 lemon

1 egg yolk, beaten, to seal & to glaze pie

FILLING

2 eating apples (Granny Smith are ideal)

2 Bramley apples (gives a lovely taste)

100g demerara sugar

1 clove

1 tsp cinnamon

1-2 tbsps cornflour (optional)

CUSTARD

500g milk

1 vanilla pod

6 yolks

80g sugar
