Join us in celebrating a time honoured tradition in the Bread Ahead calendar, Lammas Day. Every year we mark the year’s first harvest of wheat with a special service held with our friends and neighbours at Southwark Cathedral. 

As we take this moment to celebrate our most valuable commodity as bakers and some time honoured traditions, this year we would like to focus on heritage grains. In this online workshop we will be working with spelt flour, a relative of today’s commonly used variety of wheat, but with it’s own unique flavour profile and traits.

Together with our bakers you will bake a rustic spelt country loaf, this loaf has a wonderfully soft crumb yet robust crust. We will make a sourdough spelt pizza, the flavour of this pizza base will be unlike any you’ve tried and to round things off some spelt, oat and raisin cookies

 

You will need an active sourdough starter, you can build your own using the recipe we have included in the workbook (this will take 5-6 days) or you can order our sourdough baking kit HERE.

During the live workshop we will make: RUSTIC SPELT COUNTRY LOAF, SPELT PIZZA & SPELT, OAT & RAISIN COOKIES

The recipes are designed for bakers of all skill level and to be mixed by hand.

Your workbook includes a complete ingredients shopping and equipment list. The workshop will last approximately 2– 2 .5 hours.
