The Ultimate French Toast Recipe

French Toast

•2 thick slices of brioche (around 3cm, or as thick as you like)
•1 large egg
•50ml full-fat milk
•unsalted butter
•50ml double cream

Optional

•½ tsp vanilla paste
•a pinch of ground cinnamon

Toppings

•jam
•fruit
•whipped cream
•icing sugar
•honey

1. Slice your 2–3-day-old brioche into thick slices (around 3cm), or adjust thickness to your preference.

2. Set your frying pan over the lowest heat and allow it to slowly warm up while you prepare the mixture.

3. In a bowl, whisk together the double cream, milk, and egg. If using, add the vanilla paste and cinnamon. Stir until well combined (if the cinnamon clumps, give it a quick whisk).

4. Turn the heat to medium and add a knob of butter to the pan. Let it melt and coat the base.

5. Dip each slice of brioche into the mixture, about 2 seconds on each side. Don’t let it soak too long or it may fall apart.

6. Place the soaked brioche directly into the pan. Cook for 1–2 minutes on each side, or until golden and cooked to your liking.

7. Remove from the pan and serve warm. Top with your favourite extras such as icing sugar, jam, honey, or fresh fruit.
