Plain Scones
• 250g plain flour
• 12g baking powder
• 3g salt
• 60g caster sugar
• 60g unsalted butter, cold & cubed
• 90g milk
• 1 medium egg (50g)
• egg wash / milk
• 60g dried fruits

Raspberry Jam
• 250g raspberries (fresh or frozen)
• 225g caster sugar
• 4g pectin (optional)
• ½ lemon juiced
