• 3g salt
• 60g caster sugar
• 60g unsalted butter, cold & cubed
• 90g milk
• 1 medium egg (50g)
• egg wash / milk
• 60g dried fruits

Raspberry Jam
• 500g raspberries
• 450g caster sugar
• 1 lemon, juiced
• 5g pectin powder
• (optional)/ or ½ an apple
